Athletic Background:
Competitive swimmer for 11 years. Track and cross-country runner. Former youth club swim coach. Currently enjoys recreational weightlifting, running, and swimming.
Scientific Background:
Veronica is an R&D Scientist at Gatorade Sports Science Institute (GSSI) based in Chicago, IL. Prior to joining GSSI, Veronica received her Master of Science in Food Science and Human Nutrition at the University of Illinois Urbana-Champaign (UIUC) where she also completed her Dietetic Internship and has plans to earn Registered Dietitian Nutritionist (RDN) credentials soon. While attending UIUC, Veronica was a graduate member of the Nutrition and Human Microbiome Laboratory and her thesis investigated biotic-focused dietary approaches and their effects on human health outcomes. In addition, she co-led an innovative study utilizing an annotation software system to analyze and translate diet-microbiome scientific literature to support personalized nutrition applications. Furthermore, Veronica assisted the Fighting Illini to a winning 2022 football season and was an integral part in the day-to-day responsibilities including hydration testing, meal planning, and sports nutrition education.
Veronica received her Bachelor of Science in Dietetics and minor in coaching with an emphasis in kinesiology from Michigan State University (MSU). At MSU, Veronica held a Sports Performance Intern position throughout her undergraduate career. She assisted the Spartans on and off the football field and was introduced to GSSI sweat testing, recovery protocols, and meal planning. In addition, Veronica was an undergraduate member in the Exercise Cardiovascular Health Outcomes Laboratory where she executed participant data collection, nutritional analysis, and body composition assessments during her time at MSU.
